British Baker Veganizes Royal Wedding Cake

In honor of the May 19 royal wedding between Prince Harry and Meghan Markle, British baker Maisie Stedman created a vegan version of the couple’s wedding cake. Stedman—the 2016 winner of People for the Ethical Treatment of Animals’ annual “Great Vegan Bake-Off”—created the vegan replica of the spring-inspired royal wedding cake with layers of lemon sponge cake drenched in elderflower syrup and covered with lemon and elderflower “buttercream” icing, then topped it with fresh spring flowers. “It was important for me to create a vegan version of the royal wedding cake for the same reason I love to create any vegan recipe,” Stedman told VegNews. “I want to show everyone how easy (and delicious) it is to be vegan. You can create a show-stopping masterpiece, just like the royal wedding cake, with all the taste but none of the cruelty.”
