Healthy Vegan Strawberry Chia Oat Bites

Bananas and applesauce lend natural sweetness and moistness to these oat bites from Live Eat Learn blogger Sarah Bond. Craving a little added decadence? Try dipping them in dark chocolate.

What you need:

3 large bananas, mashed
½ cup unsweetened applesauce
1 tablespoon vanilla
1 tablespoon maple syrup
1¾ cups rolled oats
½ cup slivered almonds
2 tablespoons chia seeds
1 teaspoon cinnamon
½ teaspoon ground ginger
8 large strawberries, diced

What you do:

  1. Preheat oven to 350 degrees. In a large bowl, mix banana, applesauce, vanilla, and maple syrup.
  2. In a separate bowl, combine oats, almonds, chia seeds, cinnamon, and ginger. Add banana mixture to oat mixture, then gently fold in strawberries.
  3. Use a tablespoon-sized scoop and form into ball shapes. Place on a lightly greased or lined cookie sheet. Bake until golden brown, about 20 minutes.
