Loaded Vegan Queso Dip

Packed with savory ingredients, this dip from the Fast Easy Cheap Vegan cookbook is the ultimate crowd-pleaser, perfect for dipping, drizzling, and savoring every delicious bite. 

What you need:

For the queso:
½ cup raw cashews
1 cup red salsa
3 tablespoons nutritional yeast
¼ teaspoon turmeric
1–4 tablespoons water

For the toppings:
½ cup black beans, drained and rinsed, divided
½ cup corn kernels (thawed if frozen), divided
2 tablespoons roughly chopped fresh cilantro
½ jalapeño, sliced
Tortilla chips, for serving

What you do:

1. For the queso, in a high-speed blender, add cashews, salsa, nutritional yeast, and turmeric, and blend until completely smooth and creamy. Add water, 1 tablespoon at a time, to thin until desired consistency is reached.
2. Into a heatproof bowl, pour mixture and microwave on high for 2 to 3 minutes, or heat in a small pot on stove until warm.
3. For the toppings, stir ¼ cup black beans and ¼ cup corn into dip, then use remaining black beans and corn to garnish top, along with cilantro and jalapeño. Serve with tortilla chips.
