Spiced Vegan Apple Cake With Maple Topping and Whipped Cream

The flavors of autumn come together in this sweet vegan apple cake.

Apple season is here, and this light, fluffy cake is one of the best ways to celebrate and enjoy the fall bounty. It’s easy to make, and the maple apple topping and vegan whipped cream make it extra special.

What you need:

3 cups whole wheat pastry flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon salt
2½ cups applesauce
¾ cup apple juice
¼ cup maple syrup
2 tablespoons safflower oil, plus additional for pan
2 teaspoon vanilla extract
1 teaspoon almond extract
Maple Apple Topping, for serving
Vegan whipped cream, for serving

For the maple apple topping:
5 apples, peeled, cored, and sliced
2 tablespoons safflower oil
1/3 cup maple syrup
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

What you do:

  1. Preheat oven to 375 degrees. In a large bowl, sift together flour, baking soda, baking powder, spices, and salt. In another bowl, whisk together remaining ingredients. Add wet ingredients to dry ingredients, and whisk well to combine.
  2. Lightly grease a non-stick 9 x 13-inch pan with a little safflower oil. Pour batter into greased pan, and bake 30 minutes, or until an inserted toothpick comes out clean. Allow to cool before cutting into 12 pieces.
  3. For the Maple Apple Topping, in a non-stick skillet, sauté apples in safflower oil over medium heat for 5 minutes. Add remaining ingredients, reduce heat to low, and simmer an additional 5 to 7 minutes or until tender. Serve warm or cold over spiced cake, and top with vegan whipped cream.
