Vegan Chorizo and Sundried Tomato Gnocchi Bake

Adding a burst of tangy sweetness, sundried tomatoes add something special to this bake from the Anything You Can Cook, I Can Cook Vegan cookbook. These little pockets of intense flavor add a welcome contrast to the rich and savory chorizo sausage, creating a harmony of tastes that will leave your taste buds dancing.

What you need:

1 tablespoon olive oil
1 onion, finely chopped
2 garlic cloves, crushed or finely grated
6 sundried tomatoes, finely chopped
¾ cup vegan sausage, sliced into coins
1 (14-ounce) can chopped tomatoes
1¼ cups vegetable broth
1 teaspoon dried oregano
3 cups fresh gnocchi
½ cup vegan mozzarella 
¼ cup fresh basil leaves, stems removed

What you do:

  1. Preheat oven to 400 degrees. Place a large, ovenproof saucepan over medium heat and warm olive oil. Once hot, add onion and garlic. Sauté 3 minutes, but do not let brown. 
  2. Add sundried tomatoes and sausage, and sauté 1 more minute. Add chopped tomatoes, broth, oregano, and gnocchi, and stir to combine. Bring to a simmer, cover with lid, and let cook 10 minutes, stirring occasionally. Transfer to an oven to bake for 15 minutes.
  3. Remove lid and top with mozzarella. Return to oven without lid and bake 5 to 10 minutes or until cheese is golden brown and bubbling. Top with basil to serve.
